1/4 c. softened butter or margarine
3/4 c. granulated sugar
1 egg, beaten
1-1/2 c. pastry flour
1/2 tsp. salt
2 tsp. baking powder
1/2 c. milk
1 c. fresh or frozen blueberries.
Preheat oven to 400 degrees
12-cup muffin tin, greased or paper-lined
1. In a bowl cream together butter and sugar. Add egg; mix well.
2. In another bowl sift together flour, salt and baking powder. Add to creamed mixture alternately with milk; stir just until moistened. Fold in blueberries.
3. Spoon batter into prepared muffin tin, filling to top. Bake in preheated oven for 15 to 20 minutes or until browned.
Then eat them up. 🙂 They are really good.
